How to measure gluten-free flour correctly

One of the most common challenges in gluten-free baking is ending up with baked goods that are tough, gummy, or dry—and improper flour measurement is often the culprit. Using the scoop-and-level method is the most accurate way to measure flour. Simply spoon the flour into your measuring cup, then use the back of a knife to level off the top so the flour is perfectly even with the rim of the cup.

Here’s how to use the scoop-and-level method, step by step:

  1. Loosen the flour first.
    If possible, whisk or stir the flour in its container with a fork to break up clumps and prevent it from becoming compacted.

  2. Spoon, don’t scoop.
    Use a spoon to gently add flour to your measuring cup and gently tap the cup with the back of a knife. Avoid packing it down—you want the flour light and airy.

  3. Level it off.
    Use the back of a knife to level the top of the measuring cup, letting the excess fall into an empty bowl to put back into the container. (not over your mixing bowl).

  4. Optional: weigh for precision.
    For the most accurate results, double-check your measurement with a kitchen scale. Measuring flour by weight (ounces or grams) yields the most consistent gluten-free baking results.
