Artisan Pizza Bites with Caramelized Onions, Goat Cheese, topped with Proscuitto

Here is my new favorite, bite-sized pizza rounds, a twist to the traditional pizza. These little hand held gluten-free pizzas are perfect for game nights, parties or anytime and are made from our top-selling gluten-free pizza mix.

ARTISAN PIZZA BITES
Makes about 24 servings

Pizza Dough Ingredients
1 MinusG Pizza Crust Mix
1 cup plus 1 Tbs milk or milk substitute
4 eggs
¼ cup oil
2 tsp vinegar

Pizza Bites Topping
3 Tbs olive oil
3 large onions sliced
1 tsp salt
1 tsp black pepper
1 tsp Italian herbs
1 tsp sugar
2-3 oz prosciutto (optional)
3 oz goat's cheese crumbled

Instructions
Prepare MinusG's pizza dough as directed on the bag. Divide the dough in half and place the unused portion into the refrigerator or freezer. Using the remaining dough, spoon 1½" balls onto prepared pizza pan or parchment paper. Flatten into rounds, approx 3" with oiled hands. Dough should be about ¼" thick.

Heat oil in frying pan over low heat. Add onions, salt, pepper, herbs, and sugar. Stir to combine. Cook over low heat, stirring occasionally, until the onions are caramelized and dark golden brown, about 45 minutes to an 1 hour.

Preheat the oven to 430°. Place a small spoonful of the caramelized onions on each dough circle. Top with crumbled goat cheese. Bake until golden brown. about 10 minutes. Top each pizza round with prosciutto. Arrange on a serving platter and garnish with sprigs of parsley. Serve immediately.

*Note Dough can be refrigerated up to 1 week or frozen up to 3 months.
