Chocolate Lover's Brownies

These are the perfect chocolatey gluten-free brownie recipe. These brownies are moist and fudgy in the center, and cakey and crisp on the surface and appeal to all. Top them with a ganache glaze or our light frosting. Oh my my my! 

Chocolate Lover's Brownies 
Makes 24 bars 

Brownie Ingredients

    (Ganache and Frosting recipes below)


    1. Heat oven to 350°F (325°F for dark or nonstick pan). Grease a foil lined 13x9-inch pan.
    2. Melt butter and chocolate chips in a large bowl. Stir together.
    3. Add cake mix, vanilla and evaporated milk to the chocolate batter and whisk together
    4. Spread batter in pan. Bake 36 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. 
    5. Remove brownies from oven. 
    6. Let cool 1½ hours. 

    Make Chocolate Ganache or Frosting 

    • 16 oz bittersweet chocolate chopped fine 
    • 16 oz (2 cups) heavy cream 
    Ganache Directions
    1. Measure out the bittersweet chocolate and the heavy cream for the chocolate ganache.
    2. Place chopped chocolate into the bowl of a food processor.
    3. Heat the cream in a quart sized, microwaveable container and microwave for 3-4 minutes on high or until it just begins to simmer; but watch that the cream doesn't boil over.
    4. Pour hot cream over the chocolate and let sit for two minutes.
    5. Process by pulsing several times until chocolate mixture is smooth. Use as is for glazing by drizzling over brownies.
    6. Let ganache set about 10 minutes.
    7. Remove brownies from the pan and trim off hardened edges. Cut in squares and enjoy!

    For a Lighter Frosting

    1. Allow ganache to come to room temperature, approximately 2 hours.
    2. Once at room temperature, place in the bowl of a stand mixer and whisk on high for 2 to 3 minutes.
    3. Spread onto brownies,
    4. Remove brownies from the pan and trim off hardened edges. Cut in squares and enjoy!
